Diamond Patient of the Month: Tiffany

Healthy Recipe: Quinoa and Veggie Stir-Fry 🍲
Start your year off with a nutritious and delicious meal!
Ingredients:
1 cup quinoa
2 cups water or low-sodium vegetable broth
1 tablespoon olive oil
1 red bell pepper, chopped
1 yellow bell pepper, chopped
1 zucchini, sliced
1 cup broccoli florets
2 cloves garlic, minced
2 tablespoons soy sauce (or tamari for gluten-free)
1 tablespoon sesame seeds
1 tablespoon chopped fresh parsley
Instructions:
Rinse quinoa under cold water. In a medium pot, bring the water or vegetable broth to a boil. Add quinoa, reduce heat to low, cover, and simmer for 15 minutes or until quinoa is tender and liquid is absorbed. Fluff with a fork.
In a large skillet, heat olive oil over medium-high heat. Add bell peppers, zucchini, broccoli, and garlic. Stir-fry for 5-7 minutes or until vegetables are tender-crisp.
Add cooked quinoa to the skillet and stir in soy sauce. Cook for an additional 2-3 minutes, stirring frequently.
Remove from heat and sprinkle with sesame seeds and parsley. Serve hot and enjoy!
